Tim ran the vacuum and resolved that we should run it every night. (it's a Roomba)
I spent the rest of my free time in the kitchen - making bread (coming soon) and soup.
Everybody's making pumpkin bread and soup, but I'm not ready for pumpkin. It's just barely starting to feel like fall here. I need to ease into it with some butternut squash.
This soup is thick and creamy and delicious - and so easy you won't even know what to do with yourself.
Get a medium squash, peel it, and chop it into cubes.
Steam it. When it's easy to stab with a fork, it's done.
Blend it!
Add other stuff you like - half & half, paprika, cayenne pepper, garlic, salt & peper, maybe some nutmeg - and blend it all in there.
Sprinkle with a little extra paprika and serve.
Yes, I ate almost the whole batch all by myself.
Butternut Squash Soup
4 c. peeled and cubed butternut squash
1 c. half & half
1 1/2 tsp. paprika
1/4 tsp. cayenne pepper
1/2 tsp. garlic salt
1/2 tsp. ground black pepper
1/4 tsp. nutmeg
Peel and chop a medium butternut squash in cubes.
Steam for about 15 minutes or until the squash is tender.
Throw it in a blender with all the other ingredients. Blend until smooth.
Serve with a sprinkling of paprika.
